Most profitable crops for each season?
I have found that buying radishes in spring/summer gave a good bit of gold but has anyone found out what sells the best in autumn? Does winter have growing potential?

Fall has a lot of regrowables, so hope you've got some sprinklers.

Pumpkin juice sell for decent i suppose (200-300) but they take 13 to grow and another 13 for 2nd harvest so u can only harvest them twice during the season. I'd recommend getting for the altar and maybe some extra in case you want more.

Grapes -> wine = great! use fertilizers to up the quality. (silver quality gives u 1k) takes like 5 days tho in kegs.

flower in forest (and west of ranch) called titan arum gives you honey worth 3.5k (at bronze). I found in average 1/day, some days 2-3.

as for the rest of the crops, get what you like, cranberries gave many harvests so you could make some juice out of them while waiting for the honey and wine. bugcatching can net you around 800-1700/day. Make artisan goods of everything you want to sell, best income long term. Also, Lily loves taro fruits.

Fall was by far my best season, think i managed to get about 60-70k.

Winter has no buyable seeds as of now and kale seems to be the only thing ppl find to scavenge.

With grape jam 135 gold and can easily make several each day. Only using one keg for wine as I think it takes far to long. As you say Fall is a very good time to make money. Do expect there to be changes as the game develops. Like the sound of titan arum honey,

Winter has tea, snowdrop flowers, and cotton seeds available once you hit rank C. Foragables that I found included kale, brussels sprouts, pansies, tea berries, rose hips, and rafflesia (rare but valuable).

Summer day 1 9am to 4pm slow game speed down to 50% fish for great white sharks I think 850 for each shark then over 1000 if you get a higher quality one, you can easily catch 5/10 sharks a day so make 5000/10000 a day in shark money for 28 days

I don't really recoment the Wine. It takes too long to make in comparison with the juices.

How are you able to catch a great white shark? I got the improved fishing pole from the beach shop and I'm only catching Mackreles and other crappy fishes. Is there a certain spot ?

Unprocessed, Strawberries are the best in spring at 14 G/Day, in summer and fall, Hot peppers are the best if you grow them through both seasons they'll reach 9.7 G/day.
Otherwise, pineapples in summer at 8.888 G/day and Blue Dhalias in Fall at whopping 7 G/day are somehow the best. Honestly, other than strawberries, the margins for all of them are pretty bad.

margins aren't great on plants for sure

from my experience

milk/egg products aren't worth the squeeze
jam products aren't worth the squeeze
most keg products aren't worth the squeeze, booze is the exception but they take a stupidly long LONG period of time to make

You can catch the shark off Zarah's boat, but it's only summer, before 6pm, on sunny days. It helps if you have the upgraded fishing pole, but you don't need it.

I suggest you read the Coral Island Fandom Wiki, so you can learn all the options. It's really very helpful

First spring I used potatoes, summer was radishes, fall was Taro root, and winter doesn't work well for great profits from crops since even the fastest grower takes nine days. You can make lots of money from them if you plant a lot but it takes so long to get that money back in winter that you are better off fishing or diving if you want quick money.

Probably not the best method but it worked very well for me. Of course, it is also dependant on how much you are willing to plant. A hundred crops or six hundred. Getting those sprinklers will help immensely.
if you dont mind waiting, melon wine sell at 3000++ per piece. If raw, strawberry, radish, hot pepper , cranberry sell at good price. For winter just breed your legendary fish and insect

The Wild Seeds you get from hoeing the four-leaf clovers can be planted in winter and will produce tea crops. (They will grow a crop that is appropriate for the season they are planted in.)
