You can date every romance option in the game at once, but only marry one (choose wisely, there's no divorce).

Just be aware that dating really only changes their status, and opens the ability to see their cut scenes. There's no actual dating or romance really.

Is there any change in the relationship when the NPC becomes a girlfriend? Because there are no different options, and the behavior is the same...

That's why I told you that it only changes their status. All it does it unlock the last cut scenes.

nope, the singles dateable person all have locked status on the last 2 hearts, need locket item from the blacksmith to open the last 2 hearts event. cant date them all

even after you are married, you can still get a locket and start dating new people
