Help... Questions about what to always keep in chests?

When I played the Beta, I always kept a load of things in storage chests, in case they might be needed later in the game for the museum, alter, gifts to friends and random events. I ended up practically drowning with the amount of chests on my farm and most of the stuff never got used at all. When I sold everything, in order to prepare for new game plus, there were millions of dollars worth of stuff, just sitting idle.

I want to keep it sensible now I'm developing a new farm in version 1.0 and I'd like to keep chest storage to a reasonable amount, and sell all the stuff I will never need or use.

(1) Is there any point in keeping a few of each quality? I used to keep a base level for crops, which were a couple of dozen items in standard, bronze, silver, gold and osmium quality. Back then there were certain quests which would only accept the actual quality requested. For example, if you were required to give over a standard quality item, it wouldn't work if you tried to give a silver or gold one, even though they were technically "better".

(2) Has Stairway changed the game code, so that a higher quality item or product can always be given in the place of the quality requested? This would cut my storage needs to a fraction of what I had last time around. Today I did manage to give the alter a silver quality fish instead of the bronze quality it wanted, so maybe this answers one part of my question?

Do any of you lovely peeps know the answer? Thanks...

I've played a bit since release, and everything I had a quest for didn't matter in quality. I'm pretty sure I even gave someone a higher quality and 'large wool' while the item asked for was just 'wool'.

For the shrine collection higher quality tier items definitely work. But I'm also unsure about all this scavenged stuff. I have one chest for scavengables from each season at the moment and one for crops from each season where I only keep bronze and gold. the rest is made into artisan stuff and sold.
