I think it's probably related to some skill level or some such thing, if you didn't get it right away.

You need to ship 130 bronze crops and be level 8 farming, and you'll get the letter in the mail.

Maybe? I've had it for 5 days, and it's at 2 hearts. I assumed since I've already gotten products from my goat and quail that I bought at the same time, I would've gotten truffles by now, too. Unfortunately, I didn't pay attention at how many hearts you need specifically.
The wiki doesn't say so either. But I do remember that it took some time until I got any truffle.

It works the same as the other animals with their small products and large products. You'll get the black truffles first and then the white ones.

You'll get one every 4 days that the pigs are outside and eating grass.

Yeah, I just didn't get truffles from the pig after 4 days. I think it took 8 days? I think it's on the same cycle as the quail, it just skipped the first one.

I believe that it is just some rumor that was made up by people in order to trick people. If you could really get apples or Apple pie in the mail then somebody would have made a YouTube video about it to show how to complete temple offerings

Yeah, I received an apple as well in the fall. But you can't get a silver apple.

I've found that my piggies leave the truffles down the little stairs to the left of my farm. And they are above my head. I think Piggies only give you truffles like every 5 days? And yeah, if you need small milks, small cheeses, black truffles, etc, you need to get a new cow/pig, etc.

I believe there is 24 offerings in total on coral island and i saw a YouTube video of being able to do 20 of the 24 offerings currently in game maybe the next update will make all 24 possible

You can't complete everything currently... There are some things that got "de-listed" and should be patched in the future. Also, notice that some of completion rewards are things not yet in the game so making us unable to complete said quests should be by design.

Pom Pom Crabs spawn during night-time diving. FYI, there are morning-afternoon then night cycles to sea critters spawning.

Notice that some offerings have a lot of options but you just need to give 5 out of the bunch, so just skip the ones you can't obtain.

As of now (29 June 2023), there are basically a few things unobtainable and unavoidable for offerings to the Temple:
1.) Sexy Shrimp,
2.) Sunflower Sea Star,
3.) Large Llama Wool,
4.) Large Feather,
5.) Large Gesha Coffee Bean (unsure since I haven't reached Town Rank A... if it is even possible.)
