I suspect you will need to buy it from the floating market. That's where I got the white truffle oil.

Though, according to the wiki "Currently Gesha coffee bean can only be obtained by purchasing from Raja's Coffee Corner after reaching Town rank A"

Luwaks, which aren't in game yet, produce the gesha beans. The only animals implemented so far are cows, sheep, chickens and ducks.
