Yeah, before the update I would have several recommendations to get the ball rolling. But since then, the devs have changed so much it's hard to say anymore as beginning players don't have access to what older players already have in order to make up for some of the changes. Right now, cooking seems to be the easiest (although kind of boring) way to make cash. But you need the kitchen and a number of appliances to do it. Especially the grill and the blender. Problem is, how to get there now?
For me it was the summer sharks. Just catching a few a day helped me get over that hump of being able to expand my house and buy a bigger backpack and some seeds. They've basically taken that away. You can scrounge for free stuff growing around, and catch bugs, fish, etc. I don't know if they also nerfed titan arum and rafflesia black honey. But depending on what season you're in, if you have a beehive make sure you find these flowers as many days as possible. Fall and winter, I think? There is usually at least one a day somewhere in the forest or north of town. Used to be worth 3000 per honey. Who knows what they're worth now.
It's really hard to make enough for what you need for seeds and eventually, artisan makers. Now the artisan makers have also been nerfed to make it take much longer to make anything. There are less coffers and gems in the mines, and even creatures you can catch in the ocean are spawning less. I would go for beehives and honey. If you can get the beehive, you can make really decent money off certain flowers. Lilies, fairy rose, blue dahlia, snowdrops, Iris, and orchids are the best. Poppy and sunflowers are also not bad.
Buy as many of those seeds as you can and turn them into honey. I have 8 hives currently. They are helping keep my farm profitable even thought the timing takes forever. It will take longer to get to kegs, but they still make money with rice, grain, and grapes although less and again, takes longer.
I wish I could help you out more. But for some reason the devs have brought monetary progress in this game to a grinding halt. Maybe I'm seeing this wrong, but it seems like in order to drag the game out longer, so that people don't get past where they are in development or get rich too quickly, they've made it almost impossible to make money in the early game. I am really hoping they see that this is only discouraging their players, especially the new ones, and fix it.
If you're just starting off - the first month is a bit slow, but will pick up and you can end the first season with 10k-20k gold for your summer crops.
In Spring, your main crop to buy and sell is Cauliflower. You should always be broke (no gold) until the 19th, which would be the last day you buy Cauliflower seeds for the season. Tend to your farm manually and water your big lot of Cauliflower crops - sell them and bank your gold for the next season.
As stated preciously, you should have anywhere from 10k-20k gold (depending on if you use some for tool upgrades, crop upgrades, and bag upgrades.) Daily you should be selling shells and already donated bugs for pocket money.
Finish the earth mine in Spring. Worry about the house upgrade and the coop/barn in summer.
imo I honestly think they're actually doing this to pad out the early access experience. Perhaps they thought too many people were complaining of running out of things to do. It seems like the price hike especially on the stuff at the science lab in particular was a major jump (15 now versus 5 before). It could also just be that they're trying to find the sweet spot of stuff being not too cheap but not too expensive but who knows atp. Just gonna have to see where the patches go
