well 2 are accessable (Earth and Water) the other Mines are under Development.
Also the Ocean-Quest as the Meermaid-Folk get an own Patch later on. Had the same issue with the stairs and the last animal i got in the ocean was the Beluga-Dolphin next to the bridge to the Castle-Entrance(?). It ends at 42 m.
When you join the Game at the Start-Screen: There is a Button "Roadmap" - where you can see what is when planned.
You will get some Wintercrops (Tealeaf, Cotton and Snowdrop) when your town reach the rank C (i got the C after i cleaned the ocean and brought about 100 items to the Museum). Wildseeds in Winter will give you also Tealeafs.
Don´t forget to camp the kitchen utils <3.
I presumed the rest would be in updates.
Did not even think about the wild seeds and I guess I will have to get grinding for C rank.

@gatsu: yes, both are 40 level deep - so when you are done with the earthmine at level 40 you will get access to the watermine till level 40. (next entrance to earth)

it helped me a lot to buy some coffees and also some green tea for regain. (there is a Espresso Bar on the way to the Diving Stage next to the Fishenships) so i was able to take every day 10 levels after i finished my daily routine.
dunno if you also know, when you join the game you have the option to slow down the game by 50% - for me it works great.
you can smash stuff by dashing into or hit with your sword. I use dash so it saves swapping from pickaxe.
I sell everything I get from there it's easy money early on. and in my case in winter also :)

i only used the hot springs yet 1 time for fun. i always have some nice food with me <3. i find it much easier to plan with coffee (for energy) and some green tea (for hp mainly). but i find out when you have the kitchen and the mixer you can make with one vegetable a more helpful smoothie (but cooking is a bit bugged and sometimes not working, at it is not real implemented yet). so i think a bit saving food is much helpful as running to the springs <3.
but for me the time is the money. i waste more time to sit in the hot springs instead of planting one crop or getting my things done, while the seed costs me 20 corals and in future there will be a seedmaker too. sorry, was working as a financial accountance administrative in pre controlling and in the pharmacy xD. i´m a calculator without calculating xD ^^.
P.S. Peperoni-Juice (no joke) Peperoni grows like cancer, you can put it in a keg and you get very quick a juice with 50 energy vs. 22 corals.
+ when i put down the speed to 50% i can find nice titanwurz and make honey which gives me 3.000 corals while im digging silver and other gems. so i´m round about 3.000 stamina per day if i want and have also every 3 days a cash of 20.000 + i think 1.000 a day. it works <3.
