Probably just how much they boost your cleanliness.
Can anyone confirm or deny this? I've also been wondering about the functional differences between the three outfits.
I tested by loading and saving while I had enough money to buy all of them. All three provide the same two benefits, at least superficially - a flat +1 bonus to appearance and immunity to the torn and damaged clothing penalty.

If they all provide the same level of benefit then why do they all cost such different amounts? Someone else alluded to them potentially reducing costs of other things? Can you test this as well? Do things become cheaper with better outfits? Curious if this effect is due to the clothing itself or cleanliness
Cleanliness is just a component of the appearance stat you can see broken down on the character page. All of the fancy outfits give the same +1 and the same discount to buying/selling prices as any other +1 to appearance does. Or at least it did in the few cases I could easily check.
I bought the finest outfit and consistently had 3/4 cleanliness. Maybe I'm daft but I didn't notice any particular benefit to prices. Maybe some new dialog options were made available but I can't he certain. I still haven't determined if it is *better* to buy the more expensive outfits, but I bought the most expensive one anyway. The only benefit this seems to have was in the epilogue where my fine clothing seems to be prestigious back in Hovlovan. My question remains unanswered - if there is greater benefit to the more expensive clothes... I guess I SHOULD do some testing by buying different outfits and reloading, but overall I didnt really observe any price changes with the finest outfit...
I'm more or less just repeating myself, but the appearance stat reduces certain bartering prices. You don't get any change on things that already cost or sell for only 1 or 2 dragons, but it is more noticeable for more expensive things. You also get discounts on specific things (e.g. the enchantress's stones) when completing certain quests and as your relationship improves with a trader or settlement.
The outfits all provide the exact same mechanical benefit, a flat +1 bonus to appearance and immunity to the torn and damaged clothing penalty. It doesn't make any difference how you get to a particular appearance rating in terms of prices or persuading people to talk with you - having 4/5 because you lack the outfit gives the same result as having 4/5 because you lack maximum vitality.
Having a fancy outfit will be mentioned in the epilogue and I'm not aware that the epilogue distinguishes any one from the others, or if it actually materially makes any difference outside of the couple of lines of text mentioning it.
