What I used a bit more in one particular game, were Walkers. They actually make sense if you have a lot of hills/mountains and want a similar punch to tanks on offense.
I usually create a light tank howitzer as my "main" tank and I have a lesser used anti-tank variant. Towards late game, these anti-tank variants I replace with heavier tanks eventually.
I personally almost never bother with assault guns, but I think I have to experiment with them a bit more, to see if they fit my play style.
But Tank Destroyer has better "hard counter-attack" value - so, he is good at face-tanking.. tanks.
Hvy Tank "hard-attack" with 180mm HV: 1006/671
Tank Destroyer "hard-attack" with 180mm HV: 755/1006
In other words, Hvy Tank is worse at defending, holding position, which makes dessie viable choice.
P.S.: not taking into account soft-attack values here.
