It looks like some more modern effects such as reflections, lighting, and transparencies were toned down in favor of making the game look more like the original and/or for better performance. Personally I'm fine with both artstyles.
These modern effects are ridiculously overdone in many contemporary games and lead to them often being drowned in an ugly white haze. When I see this, I'm put off playing such games, and it was a problem with the remake as well. It's much better now, not only is it closer to the comic look and the original XIII, but better visibility is also important for fighting distant enemies.
The game is now less photorealistic and more like a drawing, so the colors are a bit different too. Maybe you can play around with the colour settings on your monitor to get a look that suits you better. But I don't understand your problem with enemy visibility, I see it exactly the opposite. Here's an example: In the first picture (updated game), the distant enemy has a sharp outline and is clearly visible on the horizon. In the second picture (previous version), the surroundings of the rock are rather blurry and the enemy almost blends in.

A lot of players have asked for a change in graphical style, and most seem satisfied with how the game looks now. Unless the developers add the possibility to switch to the original remake style in the game's options, there's not much you can do about it except of fiddling with tools like ReShade.
but with the new update ?
or they force us to play the new update with this 2003's game style ?
