Fish Bone Location for Crafting

What type of fish has them and where is that fish plentiful? Killed numerous trout and salmon but no luck.

All fish should have them, and I think there's an area east of Mother's Crown that's useful for this. But, otherwise any large body of water will do; ponds and lakes are (in my experience) more reliable than rivers.

Alternatively, you can just farm Processed Metal Blocks and trade them for Scavenger boxes (which contain animal parts).
