Go near forests/trees where you can find foxes or rabbits (preferably booth), chances are theres racoons around. Use focus and aim at small animals, anything that look like foxes or small boars and wait for the name to appear.
When you see racoon tag (right mouse button or right trigger). If you start to actively search for then like this you will find a couple soon enough.
They seem more rare then foxes and boars to me but not so rare- i was just not noticing then before as easily; Foxes run so they cath our attention more. Theres lots of grass around... bu theyre there
So you should look there for them. They can be found in abundance there.
Yeah, there's usually plenty of them running around forest areas, especially in the Nora lands at night. Just keep flipping on the focus and mark them when you see them.
Incidentally, if it helps with the Rat farming, you can find a bunch of them that frequently respawn in the first ruin that you visited during the prologue - and they're in small rooms with nowhere to run so it's easy to chase them down. There's also a metal flower and some loot down there so there's no harm in dropping in anyway.
