1. spam fire arrows to make it expose the orange heating vent thingies
2. when they are exposed, inflict as much damage as you can (e. g. with 3 precision arrows in one shot)
3. rinse and repeat
When it shoots at you, dodge, get it right and you'll take no damage. If you get too close it will use a flamethrower on you, try to avoid that.
I always look for high ground or a hiding place when there is a big beast involved.
The only concern with story mode is that I think achievements are impacted (which may not matter to you).
Fire arrows until vents are exposed then precision or hardpoint arrows deals heck of a lot of damage.

Actually, the only achievements affected are those that are explicitly related to game difficulty
New Game+ Completed
Completed a New Game+ playthrough on any difficulty.
Ultra Hard Completed
Completed a New Game+ playthrough on Ultra Hard difficulty.
Seeing as both are related to completing a New Game+ playthrough you can freely switch difficulty on a normal playthrough, which is something that you cannot do on NG+ because the difficulty you select at the start of NG+ will be locked for the entire playthrough.
Oh, in case anyone is wondering: yes, completing a NG+ UH playthrough will complete both of those achievements!
Try to kill as many watchers and NPCs as possible using stealth and when you trigger the Deathbringer into action hide behind the building to your left as you enter the area and just peek around and take out the big gun on the front. Just keep an eye out for a stray NPC or watcher attacking you from behind. That one is actually the easiest one because it doesn't start out with full health and takes more damage per hit than the others you'll come across later.

Jokes aside, try to kill surrounding enemies without getting detected, then I find hitting the weak spots and spamming fire arrows into the body effective except for the end game one. That guy takes a bit more work.
