I confess, I had the same issue. This is the only game, in which I don't like mount riding. I ended up just running, it proved to be overall less irritating.
Generally you have two keys:
1. Sprint - (I use Shift for this) - hold it or press it a few times subsequently to speed up
2. Slow - (I use Alt for this - same key as Dodge) - for slowing down or stopping
Directional keys serve mostly as direction change.
The machine will also slow down on obstacles...
I just run or fast travel.
Your choice, do what works best for you!
I found it harder to control the mount when using M&K but easier when using controller, changing direction using M&K will make it suddenly stop before turn or it makes a turn too much almost make a U-turn but when using controller it's way easier and makes turn more smoother.
And yes it always run towards the danger situation also it will slow down if the path is blocked or near other hostile machines and I hate that because I want it just run pass them.
I guess that I will stick to running and fast travel then.
