Can't see all items in inventory
I want to upgrade one of my satchels and for that I need 1 x Fox skin. but in the inventory I don't see any fox skin. However, when I kill a fox and try to pickup the fox skin, it shows that I have 50/50 fox skins.

Also noticed similar thing with few other items.

Please advise what might be the problem?

50/50 represent all inventory slots, not just fox skins or any other items. You just have 50 filled slots out of 50 total. All items have different stack sizes and you can have multiple stacks of the same item in the inventory, but each stack uses up one inventory slot

Inventory is full clean out some junk.
