Is their a reason to get weapons later in the game?
I'm pretty sure something similar has been asked, but why would I grab a revolver in the fishery watchtower when I could get one in the safe a lot earlier, I know people will miss stuff or skip an area on their first playthrough, but when replaying the game the only reason to go back and get those other guns is to sell them, maybe giving them unique designs or special engravings would make them worthwhile.

Each player has a different way of playing the game, especially for the first time.
Someone got the right password on their first playthrough, someone didn't.
And someone used "451" password and died! And not everyone is replaying their games/optimize their playthroughs.
Also it's nice to sell them, yes.

I didn't think about that, it would still be cool if almost every weapon had some uniqueness to them(please Dillon!).

It's too much work for something so small. Sure, some different looking models can be nice to look at, but it has no gameplay value at all.
Another idea is to add durability, but I don't think everyone will like it.

I feel like either way it makes sense lore-wise, the guns are likely made by the same company, so all of them looking the same wouldn't be too crazy, but some of them being personalized makes the world feel more lived in, SOME of them though, for example the weapons in the gun shop would be normal, but the hidden shotgun near the emerald eye would be unique, so the devs wouldn't have to go back and change EVERY model but only some of them, it would be a good reward for players who like to explore.

I can think of at least three different reasons:
1. The inventory may get less manageble the more content we get, making it necessary to create several caches to return to.
2. Some weapons are just easier to get later on. For example, while getting the Shotgun in the Tavern is the fastest way, it's also way riskier than just nabbing the one in the gunshop.
3. Weapons are quite valuable and Grezzo will buy them.

So, you already answered your question yourelf.

Also, it's more realistic when, like, weapons are to be found in several places.

With how slow weapons are to reload carrying 2-3 revolvers and switching when one runs out mid-combat it's a viable strategy.
