If you battle an AI (either campaign duel, reverse duel, or challenge), you either get 3 or 1 card of their deck (if you win or lose). Once you have completed the deck, you get additional copies of their cards until you have 3 copies of each. Once you have 3 of all of them, you only get points against that AI. Repeat for each of them.
So yeah, if you know a card you're looking for is used by an AI, just duel it in a loop until you get 3 copies of it.

Yeah, it´s pretty bad how it is set up in "Legacy". Even worse is, that an Option for this exact Problem existed in quite a few of the older Games, that i played at least. In some of the Nintendo DS Games, once you reached a certain threshhold with a Pack (usually around 85%-90%) the Game alowed you to buy Single Cards from the Shop instead of Packs. Said Singles where most of the Time priced at atleast the Equivlant of 2 or 3 Packs, (the better the priecier, obviously) but you as the Player had control over what you got.
Also, i want to mention my current approach for grinding.
I have not even completed the first Part of the Campaign yet, but i found a somewhat consitent Strategy. I have build myself an "Amazoness" Deck, and constantly repeated to challenge Mai in the first of her Duels available. It is very grindy, but the more you get the Mai pack to build up your Deck, the more consistant the "Amazoness" Gameplan becomes.
Also also, if you have a Partner/Opponent that you can coordinate with, apparently you could earn one Million Points if you build a specific Deck
