If you want to get the most out of your cards you will want to bank mayo for now and get the bonuses that give you mayo and card progress when destroying cards.
The reason being that cards get significantly better bonuses when they are at higher tiers, but getting to those tiers requires to be already well into sadistic difficulty.
On the other hand, you could opt to go for a slightly less optimal route for better short term results and use the few good quality cards you get to push you a tiny bit quicker towards sadistic.
As for the energy and magic cap, don't worry too much about it, as you continue to pump exp into those stats and get stronger and stronger pieces of gear as you go to stronger zones it will rapidly not be an issue anymore (well, rapidly might be a few months but it takes longer and longer as you near the end of the content and probably of the game).
You need a perk and a quirk to get something out of it, both only available in sadistic difficulty sadly so my advice wasn't exactly something you could do right away, sorry.
I'll probably gradually collect cards, destroy the really bad ones, maybe use any that are OK or higher if I have the mayo and they're of important stats (adventure, hacks, wishes), and I'll look more into them after I hit sadistic. Right now my wishes aren't built up to where I can reliably improve cards. I have 6 for card tiers, 1 for deck size, and 1 for tags, and they take anywhere from 2 1/2 to 12 days.
So yeah, for now it's build up magic, then build everything up to unlock auto activate on them, etc. Looks like I'll mainly be banking mayo until Sadistic, which is what I guessed I'd be doing.
I'm a long way from being able to get any perk or wish related card improvements, but a point in Faster Mayo Generation 1 in Quirks is attainable every rebirth, so I'll work on increasing generation speed for now. I'm not going to worry about speeding up card drops until I can afford to increase my deck size considerably.
Without those 2 extra mayo generators, I feel like it would be missing out on various cards because I was only generating one type of mayo per time. Now I'm generating 3, so every 8-12 hours when I get back into the game, I feel like I have gained many mayo types that could be used for the various cards.
