You also do not want to put exp into adventure stats for quite a while, it is significantly better spent increasing your energy and magic stats.
As for what you might be missing, double check all of the features you unlocked up to now to see if there is a source you missed.
If you didn't do challenges, the basic challenge brings you a big bonus and the other challenges help indirectly.
Advanced training gives you quite a bit, blood magic can increase your time machine's output to fuel the gold diggers and NGU has quite a lot to bring to the table, including adventure stats bonuses.
For fruits, you really want to get them to rank 24 as soon as you can, especially fruit of gold (very cheap to upgrade so good to harvest for seeds), pomegranate (lots of seeds) and fruit of wisdom (lots of exp when eaten at high ranks).
I'm on 2/7 on troll challenge right now and the next one unlocks tier 24 fruits. I guess I've been putting doing this challenge... When I first did the troll challenge I was very low level and it took me something like 20 hours to get through it. I swear I have PTSD from it.
For the armour and weapon, always go for the ones from the highest zone/titan you can farm, so in your case walderp's set (or rather either of his sets since he drops two).
Of course there will be times when you will want to check bonuses more specifically but in terms of adventure stats the highest zone/titan is always the strongest when levelled and boosted.
There's really no reason to blaze through the zones, anyway, since it'll take awhile to max out the sets from each world (a LONG friggin time starting at Chocolate world apparently).
You can also do this same thing with level 1 BAE gear instead of BDW level 100, but that is not as popular.
Anyway, do not worry about base adventure stats at all, and focus on getting better gear and better Adventure multipliers (especially NGU Adv and permanent BEARd). Lots and lots and lots of energy is what gets you there faster
You will reach diminishing returns on all the NGU items but that doesn't mean to stop doing htem. For example, you will one day reach a time when you're at level 1,000,000+ in all those NGUs. So while they diminished from 1000 and higher, but you can expect that your % gains will keep increasing even if you just keep going in NGUs also.
An example is that even if you may feel like moving your stats around to different NGUs or beards to get them to reach the soft cap, you might consider that drop chance and adventure stats are something that you are almost always increasing every time you play.
