One thing I did that helped was to make a save file, then start a challenge. If the challenge looked doable in an amount of time i was willing to put it, then I kept going.
If it wasn't, then I reload the save file and keep doing what I was doing (which is often just waiting for 24-hour rebirth time).
But it helped me learn things about what I needed to do, to be able to do the challenge. For example, if I couldn't do the challenge without gear, then it means my base stats need to be better.
If I couldn't do the challenge without NGU, then it means my base stats and maybe gear needs to be better.
So that's just something fun to do if you like to figure things out.
Otherwise, I used a document called Pokie's NGU Idle Challenge Guide V1.03 but I can't seem to find a link to it now. My Google-fu is lacking in getting back to it.

There's a lot of overlap with the other one, but it's far more comprehensive.
I wouldn't necessarily follow it step-by-step, but it is good for giving a rough idea which challenges you should be ready to take on at a given point, and where your stats should be to do so in a reasonable time-frame.
