Difficulty isn't adjustable in Morbid.
If you're not sure yet, gameplay streams and video reviews tend to give a very good representation of the content and how the game plays. You get a real 'feel' for it in videos.

How does saving progress work?
So in a typical souls-like fashion, there are Shrines that work as checkpoints :)
