Can't 'Calm Down Guests'
The tutorial explained that when a guest becomes agitated (still sitting down but with the angry moodlet), I should go and try to calm them down. When I walk up to them, I see the action text appear "Calm [E]", but nothing happens when I hold E or press it repeatedly.

Eventually the guest becomes rowdy and will get up (still with the angry moodlet) and I'm able to kick them out with the broom, so that part is fine. I'm guessing how it's supposed to work, is that if I can calm them down in time, they lose the angry moodlet and turn back to normal, but so far I can't figure out how the "Calm" action works so I always have to wait until they get up and then kick them out.

Is there a specific spot near them I need to stand, or is it a different key from E, or something else I might be missing?

Btw, If any developers read this, I absolutely love the game so far, keep up the fantastic work!

Okay nevermind! I figured it out, I think tapping E a few times seems to do it sometimes, it just wasn't super clear since there was no visual feedback like there is with other actions.

When you successfully calm a guest, they should say a corresponding dialog line, such as "oh, OK, I'll shut up". If you have Tavern Vision enabled, they'll also lose the red overlay. So look at their dialog and color. If you don't successfully calm them, they should immediately get up and start yelling, and you'll have to hit them with your mop.

If neither of these things happens, the game didn't register your attempt to calm them, which usually means you weren't in interaction range (weirdly, being too close can be as bad as being too far away). Make sure the interaction prompt is visible before hitting E/clicking the mouse.
