Am I still meant to be making just 10-15 gold a day at level 12?
I've seen people with 100s of gold, I'm wondering is their something serious I'm missing out...?

It depends on what you're actually doing in the tavern. How long are you open for? Are you utilizing the workers properly (basically, are they hired only when the tavern is open)? What are you selling (only basic foods? the food book isn't filled up? etc etc).

I don't remember what I made when I was level 12, but it honestly doesn't seem like you're doing that bad. It should also increase as the Haggling skill is upgraded as well.

For me, I'm at level 19 (that max level at the moment), and I typically open right as I wake at 6am and have my workers already hired (I don't dismiss them, that way there's no hour wait for them to come in and work as long as it doesn't bug out). At the moment, my food book is all filled (but it's a bunch of random extras I had made, so it's not normally how I have it) and my kegs are all filled (all of them with the max ingredients, which for the beers are cherry, lemon and honey/lime).

I did nearly a fully day shift (06:40-3:00). I started with about 7 gold 33 silver and I ended up with about 45 gold 74 silver. So, I made about 38 gold 41 silver in one day. This is probably not the best someone could do, though.

It also depends if you only sell 100% of the most profitable food / drink. Which can be hard for a bit until you get enough building materials, gold, ingredients on your farm, putting in the best ingredients for food / drink for best profit and hiring employees. Also grinding all the rock minerals everyday is a must until you hit you build space cap and helps to build your first few fermentation tanks instead of buying them. You only need a diverse farm until your experienced capped ( meaning you don't need a random ingredient to fulfill the order quests ) and then can switch your farm to only the best or most profitable ingredients. I don't know how much gold I make a day, but can go through about 200 drinks and 300 food ( only tested this number once and gold was rounded down because I was more interested in how much I need to make for food and drink for the day ). Which is about 50 gold and maybe an extra 6-10 gold for rented rooms. As long as you don't go below 2 gold when everyone is hired and you are making good money everyday. You wont have to worry about the hired people not showing up because you didn't have any gold. Only tavern 15-16 at the moment.

I know I say gold for hired people but 6 cleaned rooms plus the bartender and waiter is already 96 silver before you really start getting people to come in for the day.
