Keg: everything else + all stuff that fits into a tap + water (yeah, not very helpful having a plethora of drinks but only 4 kegs)
Later, you need base spirits and wines to make pricier cocktails at the cocktail bar.
E.g.: you can obtain a recipe for vodka which can be sold from the keg (yeah, not very logical) or use it as an ingredient to make a bloody mary later.
In the early game, going for the beer to fill the taps is a good idea as well as using kegs for tea, fruit juices and water
Mid-game, you will never serve water and drop out the teas and juice for spirits and wines
Late game you will serve cocktails from the keg and have a stash of various drinks. Look at the calendar, which ones sell well (trending items) and refill bar accordingly.
In my book it is never wrong to obtain new drink recipes although do not neglect foodstuff. You might end up with chests full of ingredients you cannot use otherwise since you lack the recipes for processing it.
Lastly: especially in the early game, check the season when levelling. Imagine, it is spring and you could get roasted corncobs. Wouldn't do it, since corn grows in summer so you get a temporarily useless recipe. Same for beers that request certain hops like the centennial which grows in autumn and winter. It is always a good idea, be it food or drink, to get new recipes you have plenty of stuff for making them.
Last thing to think about: does the recipe require aging in a barrel? Some recipes like the brandy do not require aging, so if you are a bit hard-pressed for cellar space, do not get more recipes for stuff that needs to be aged.
Only carbonated (bubbly) drinks can go in the tap.: beer, cider, Champaign (Christmas special), mead, and anything made from them.
The Halloween drinks are not carbonated and can only go in kegs.
Also, never sell less than aged-ent Orange. You have to hold off a little at the beginning, but the money and rep are well worth letting things age fully. Even quests off the board are better orange as you get paid for the product. No sense wasting money you get for free just holding your adult beverages for a bit till they mature.

We hope to have more outlets like a 2nd bar or a juice cart or a patio or something so we can make more things, but as of now, once you get a couple beers you like and whatever barrel stuff you like and just make those 8 things forever and a day.
At least you don't have to think... Just brew, age and sell.

I concur with your view on the cider. Still a good thing to have as apples are quite easy to obtain and rather cheap. Also it is produced faster.
About the aging...generally you are right. You are paid for the seold drinks en bulk so grand reserve sell higher than young. Yet, the board quests are consecutive. Once you clear all three of the day, another set of three are offered and after that, another batch. In that case, instead of blocking my run for the day, I would rather sell green quality drinks if the only place I have them is the aging barrel but then go for another 3 orders that cash more money and reputation than the difference between green and grand reserve batches.
I am rather annoyed if the board asks for fish dishes with fish in it you cannot obtain because of season limits. That puts a hard stop on my run as well as asking for beer I have not brewn yet or have used the 'wrong' hops.
It can be good money for sure, but the Rep is way light. It's 1 or 2 customer's Rep when they leave, hardly worth it in my mind. I will make the same cash selling to my customers but I will make 15-20 times the Rep because my people leave happy... Maybe I'm missing something, but my meter goes up just fine everyday so, I dunno.
I used to make light batches for the board aging wise as well. BUt heck, you get the cash for the good stuff, might as well get paid. And I can just make the things I make and not have to try and contort special orders when I have 10 other things I need to do. (...I'm really slow...)
Like all things in the game, this suffers from diminishing returns as you get up in the levels. It has almost no real meaningful purpose past the 2nd year. You make so much Rep just being open... In that regard, I'm actually glad they stretched things out a bit and paced things a little slower.
I am really hoping for a patio or a 2nd bar for the room side with a stage so I can poach the guitarist from the guy in town a couple nights a week....
