we can only hold 5 drinks on the serving tray.
However I have yet to hire staff.
I can see that if you wanted to be free to do other things while staff run the tavern for you this might feel limiting.
I think a good solution would be to increase the amount held by Taps/Kegs should hold full 99 stacks instead of 30.
8 different drinks offer plenty of variety and with nearly 800 drinks ready for sale I'd hope the Tavern could run a whole day without needing to be refilled.
4 and 4 is OK, though I do yearn for a Tea and Juice cart. Especially if I can place it so it isn't tied to the bar. Make another position to administer that area as a 2nd bartender who doubles as a waiter / fire starter / room delivery when needed. If I could have 30 tea and 30 juice on that, I'd be set.
I don't want 99 units per keg/tap though. 50 maybe.
I currently make it through the day filling all my units in the morning and topping them off once after the dinner rush.
99 and I'd forget they were there.... Unless we can get those huge kegs in the other tavern. Those would hold 99 for sure.

I hope it's an OPTIONAL quest. As I prefer to keep a smaller tavern.
although I do like the idea of loading a full 99 stack in taps/kegs

You already are free to do that. It's impossible to run out of drinks if you start with full taps and kegs.
I hire help ASAP. I got things to do besides wait tables and run around chasing jerks who think my water is watered down...

But my bartender already struggles badly enough trying to serve up all the orders from a compact space. If I gave her the variety that my local brewpub has on its menu of on-tap beers, she'd probably have her pathfinding glitch out.
Go big or go home.
But yah. Bartender would have an outright aneurysm just looking at the wall let alone pulling a draft... ?B)
