Reason for the taps
Is there a reason to leave beer in the taps, or should I just put the keg into the tap, immediately pull every drink then stock it. Do items in the stock expire? It seems easier to not use the taps while the bar is open.

People won't order things from your inventory.

You can pull all but the last beer, only pull the last one when somebody is ordering it.

I meant putting it into the stock, like you do with food items. That works fine, and they will order it.

In the early game, when you are tending bar yourself, it saves a lot of time to pre-pull all the beer and put it in the bar stock, especially if you do it during downtime between wiping tables. Once you unlock staff, the barkeeper can handle all food and drink sales. Then you can just shove kegs in the taps as necessary and save yourself the effort.

I really like to pour the beer myself. It makes more fun (for me atleast) to get the order by myself instead of just pushing [E] whenever a customer arrives :D
But when there are just 1 or 2 pints of beer left in the keg then I, too, take the last drops and store them in the stock and just refill another full keg. So I dont have to wait until the keg is completeley empty to change it and take some spare time to prepare another full one. But I guess it's just your personal feeling and how you want to play it though :) No harm done if you take every pint of beer right at the beginning :)

I have been loading the stock with piles of beer. It'll stack far higher than 20 if you make the same thing too :) I do try to keep them on tap as well though, but if I have a bunch of aged barrels, I'll pull so I can get them all in. I am definitely finding myself running out of space with aged liquor, wine and beer in there along with food.
Sometimes I open the tavern just to make room. And I guess a ton of money.

I didn't know it was possible to put the beer from your inventory into the food stock counter. Sometimes I pulled the last one without thinking and then couldn't sell it.
