I stayed in the inn all day, but I do go back and forth between cellar and kitchen.
I haven't noticed anyone VIP-ish, and the event keeps on getting deferred to a later date on the calendar.
If you go to bed after midnight, I think it messes things up.
When I went to bed around 2-230, I found the date moved AND I noticed my character yawning in the beginning, which was a bit odd.
When I went to bed before midnight, the date stayed the same, the important guest showed up and everything.
I then repeated this a second time with going to bed earlier and getting the date to stay fixed.
Hope this helps, and maybe this can point to the bug.
99% it was a bug
On the off chance that the devs don't consider this to be a bug, I'd push back on it. There's no intuitive reason why you ought to close your pub before midnight for any reason; guests are happy to keep buying stuff, and my modern-day experience with bars tells me that I also like to drink beer after midnight.
Anyway, see you folks in a few months when I start a new playthrough and forget this information in the meantime.
