I understand that this is the intent of the game mechanics, but it doesn't have to be pineapple, which is strongly associated with growing in the hot season. I thought it could be another fruit or crop that grows in winter instead.
for example-
blackjack table: where you can participate in games against your customers where you are the house/dealer. and can hire a worker to take over for you too!
Poker table
Roulette table
where the same function works and as a fun bonus maybe the different gaming tables trend differently from season to season..!!
various finishing touches on e.g. the parrots, where first of all you should be able to display them on your bare table and that they can then fly around your bar, somewhat spontaneously and land on e.g. other people's tables/Vip table where your special guest sits and depends on how well you have taught your bird manners, can then say something to the guests at that table and also give a bonus in xp! another example is also that your cat can do the same thing, only that the cat snuggles with them/strokes against them!

that you should be able to hire a farmer who can take care of your farm, take care of your animals for payment!
Understand of course that it is necessary to adjust certain things regarding the resources you get and such so that it becomes more balanced!! but just a fun idea, hope you take the time to read this and maybe incorporate an idea like this into your game! I think that could make a big difference to a more pleasant experience for many!
I also love this game.
The changes you suggest are unappealing to me, it would change the game from
Travelers Rest cozy tavern sim, to Gamblers Rest Casino Sim.
I'm sure there's games out there that cater to that, I'd prefer Travelers Rest to maintain it's cozy game roots.

I think it's because certain crops that need to be harvested in the wild are so scarce
Aroma plants have been changed to three each, and they are supplied to some extent, but they are still scarce and wild herbs are too scarce

I miss my Xmas recipes that are unlocked in my old save! Dx
I get that we have the IRL holiday events, but I would love another chance to get the unique Xmas decorations as well as getting back my Xmas recipes!
Also Easter should be a thing, or Ostara if we're going more Pagan with it, as not everyone celebrates Easter anyway. There could be Holidays like Diwali, Hannukah and Holidays from around the world, it would be really cool I think to have a special day every 2 - 3 weeks or at least 1 week out of every month.
Maybe a whole group of special guests could visit on that one special day or special couple days (Xmas+Boxing Day / Good Friday + Easter Sunday) and maybe even stay the night and during the days prior we could have temporary access to special items and/or recipes from NPCs, etc... It would be really neat I think.
We could also have some crops temporarily for sale exclusively on those days of holiday prep as well - things like flowers, which people have been begging to have back, and topiaries for our garden, for instance. The flowers could be seasonal and the topiaries could be permanent but could maybe require maintenance or something. Maybe every start of a new season they look all janky and we have to whack them with the scythe a few times to get them back into shape or maybe we buy garden shears to shape them, with the possibility to change their shape. Maybe there's always the chance to damage the topiary if whenever we change the design and we have to wait for it to grow out again to fix it or maybe we need to wait til it's available for purchase to get a replacement
I feel like this could be a fun additional gold sink for late game, as well as allowing for more customisation for the outside and maybe even for inside, if things like bonsai trees get added as well.

Doc Savage then added, and I agree whole-heartedly, that non-descript/fictional holidays would be great.
I added that these fictional celebrations and ceremonies/festivals could very well tie in with the lore that this new update has begun developing.
Hope the devs check out this possibility as I think it would really add a lot of variety to the gameplay loop.
Meanwhile I'll carry on dreaming of dolphin topiaries, bonsais and flower gardens! xD

I think it would be cool to be able to buy an ice saw from Hallmund in Winter, the kind that those folks at the start of Frozen use, so we can harvest some ice in the winter, from the river bank and mountain lake, it could refresh every day and we could buy a freezer from Amos to keep the ice stored through the hot months. That way exploration is encouraged even in Winter when there are no herbs, no fruits on the beach, only oranges to the South and turkeys to hunt both North and South.
Also, for those that don't want the faff of harvesting it themselves, an ice salesman could maybe stop by once every week or so, all throughout the year, with a limited number of ice cubes for sale at a time, to keep it balanced, and in Winter time maybe he could also sell us ice sculptures for our garden which melt come Spring time. I have already filled my garden with lanterns and urns - I yearn for something else to pop down on my lawn for decoration, darn it!! xD
-- Speaking from a game design standpoint, the new story line is, well... not great. When I'm playing a cozy game, my goal is specifically *not* to take over/save the world. I just want to build and grow things and make cool food. And the idea of a tavern-keeper king is honestly silly enough to be immersion-breaking - they're two very different skill sets.
-- Why exactly does this fellowship of tavern keepers need to be "defeated", anyway, and why do WE want to do it so badly?
-- According to the game introduction, Mai has been haunting/taking care of the tavern for centuries, and yet, once you complete the tutorial she completely disappears. This isn't just a problem with the game's internal world-building and logic; it's also really a missed opportunity to get the player invested, and could well give you a stronger story line tie-in to the original premise of the tavern-keeper king. (It's not logical, so you really need a strong story to make it work.)
-- Please please PLEASE go back to allowing food crafting to add our choice of fruits/veggies/spices etc. Not being able to is LESS realistic, not more! (Ask anyone who has ever brewed alcohol, made bread, or cooked, well, ANYTHING.) The thing that really set this game apart among the cozy game genre was the ability for the player to create their own unique flavor combinations, and you got rid of it!
-- If you're concerned that people might add inappropriate flavors, well... people do that in real life, too. Sometimes it works. Sometimes it doesn't. If it doesn't, that would likely impact the player's reputation as a chef, don't you think?
-- Can you use some kind of visual indicator (different background color, maybe? something more than just a word) to show that there's a difference between buying an item versus buying the recipe so you can make the item yourself? The way it's currently set up isn't intuitive.
-- Please. I'm begging you. PLEASE add a way to sell excess items. I don't care if it's by putting them in the chest by the door, or selling them to NPCs, or something else, but inventory very quickly becomes overwhelming, especially once you pick up the perk that allows you to craft larger amounts. My tavern menu is filled with stacks of 2 and 4 items left over from commissions, but the tavern guests hardly eat any food so it just builds up. I've caught maybe a dozen fish, but it makes no sense to catch more until I use the ones I have, simply because I can't sell them, and they just sit in the chest until it's overflowing. I've got something like 150 chilies because I put in 6 chili plants, and aside from cooking an occasional dish with them, *I can't do anything with them*. Oh, and I have several stacks of 2-4 beverage items in my backpack because those can't go into the tavern menu any more, and only the grape and apple juice can be used in crafting.
-- I love the proximity crafting; it would be very cool if that was expanded to the crafting areas outside as well.
-- With the larger map (which is gorgeous, BTW!) it would be nice to implement a fast travel system, especially since we can't buy things via mail order any more.

I agree that a way to be able to sell excess stuff would be incredibly welcome, so if possible that would be a nice thing to add.
HOWEVER ... for the love of everything that's holy either get rid of the fishing mini-game or make it something different so people like me can actually fish in your game. I know there are people out there, who don't mind the mini-game (possibly even love it) and that's fine, but fishing mini-games as a whole give me the freaking hives everytime I see them in cozy farm sims as well. I prefer the old days where all you had to do was be in the right season, have the right bait and the right level, wait for the fish to bite and click. Is it not possible to just be able to buy or put in an option to make the mini-game go away for those of us who don't want to do it?
Finally for the love of the Planet, PLEASE put it in the options so those of us who use an AZERTY keyboard, to key our own personal letter choice for the bait option. I cannot put bait on my rod because the key is fixed on the letter Q, which being an AZERTY keyboard user means I use this to move to the left. Everytime I even want to attempt that hive-inducing mini-game I can't, so I have to switch over to my PS4 controller to be able to add bait and then switch back to my keyboard.
Despite it all, I really do love the game and it would be nice to see what you guys have planned for the social and magic aspects and all other things that you guys put on the roadmap. I hope what I've said was at least somewhat helpful (sorry if it seems a bit ranty, I've been really, really, really frustrated with the fishing) and I look forward to future updates.
You can buy fish from the fishmonger next to the creepy green grocer twins in town.
Bring back ordering from the post box, but have it cost 10% more than going to town and arrive the next day.
