I have no idea how to do this and not fall off, I don't know what the rules are. Anyway, I thought I was supposed to stop drinking. Why am I forced to waste money on booze? I've worked too hard already just to starve to death because nobody likes Kasimir.

It's just this one quest and Phillips is not a good person.
Lead the pig into open meadow, save, drink a bottle of vodka, mount the pig and try to stay away from obstacles for 15 seconds.

Nice large open area is definitely the key - make sure there is nothing for a fairly long distance in front of you. Maybe clear some rocks with the shovel first. You don't really have much steering ability, but you do have a little I think - just try to avoid any obstacles like rocks or trees that will throw you. And yes, save before you try so that you can load and try again.

There is a fair amount of control. You can even force the pig sto stay in a small area. Just always counter the direction it wants to go instead of letting it go full speed ahead. Once it gains speed it gets harder to steer.
