how do i keep hay from rotting so i can actually feed my cattle during winter

Hay doesn't rot. Fresh grass does. Hay is a dried grass. So:
You buy some drying racks, throw the grass on them, wait few days and gather unperishable, dry and nutrishious hay.
Or you can store the grass in the cellar, but it takes a lot of space and is not such a good foodsource at all.

Hay seems to disappear if left in piles on the ground (even in warm months). Baling it with string seems to prevent that from happening. It may be a bug.

Yea, been a big problem for me too. Hay will just disappear. Makes it a waste of time to try using hay. Just saved up to get the machine to just turn everything into fodder.

Are you sure you mean hay (dried grass), not fresh grass? We know the fresh grass bales used to disappear because of savedata error. Are hay bales and stacks also disappearing in current version?

Yes. 3 different times I was removing hay from the drying racks and placing it in my barn. Was running around doing other things too and when I would leave and come back or save and reload, it was all gone. After that, I tried to just to just leave it in the rack (thought maybe that is where it was supposed to be stored) and then it disappeared from the racks also.

Ok, when did it disappear? During winter? Or just like that in the middle of the year?

Hmmm great question.... I do believe the first time I had issues, it was in winter. I assumed that the hay didn't last like straw does. I had just a big pile of the hay and it disappeared (did not rot or anything, was just gone). Then, the next season, I remember trying to just leave finished hay in the drying racks (assuming maybe it needed to be stored in the racks) and then it definitely disappeared from the racks during winter. After that, I tried making hay one more time and was going to try baling it, but when I saved and reloaded, I went to bale it up and it was gone. Can't be sure, but it is possible that was in the winter also when it disappeared.

Found it. Turns out hay left in heaps was unable to load properly. It's fixed now.
