How do I get hide from the animals? When I gut the animal all I get is meat and no skins, and the entire carcass is still there.

You have to bring the animal back to the barn to harvest the entire animal. Its the table in the back of the barn. Just put the animal on top of the table to use it.

Use the butcher table in the barn.
