The game looks not bad, but the gameplay is extreme bad designed and I doubt that they will ever change it. It's better to look for other games. I regret the purchase very much!
About predators, the game doesn't include character life and it doesn't make any sense the concept of being attacked. Think about it as it's kind of ideal world where you are the predator for all of them, which at the end is true. If you really miss that, COTW has this mechanic for you.

Btw you can safely shoot at animals from 100m distance, just try to crawl into a proper firing position.

Anyhow, I'd say keep trying and testing. Even though the game isn't that complicated, many factors can affect your hunting success. I personally didn't find scent killers any useful, just as the dog except for hunting ducks, but a good cover and remaining silent seems to be important. But as I said it's only my experience, it may take some patience the figure out some methods that's gonna work for you. :)
All the tips that Special Guest Start has given to you should improve your experience a lot and, as he said, shooting from 100m should be safe and with proper position, you may gain hunting precission.
Here is another tip for you with animal callers (if you don't use them you should) that would help you.
When you hear the animal and the icon appears try to find a good spot to use the caller. The animal will describe, approximately, a line that will cross near to the place where the caller was used. With that said, you should use it in a place where you would have plenty of visibility of the animal and a place to stay covered on the surroundings (on the sides). Also, you should control the wind and, if it's possible, stay with headwind.
If the animal walks towards to you, he will see you from further distance that if you are positioned in one side with some cover and, also, you would have better aim position to make the shot.
Thank you for the observation about smell and noise in the forest. I noticed that I could hunt easily on first minutes in the forest, but then animals would disappear and I couldn't understand what I was doing wrong.... Now it makes totally sense to me.
This picture is a really nice example of a good spot to wait for your prey :)
That spot I found to be really good for rabbit hunting because that is what I found challenging to me at an embarrassing level. :D
They usually hop around below the ridge and I have good visibility on them, otherwise I literally can't find them. But the interesting things is, sometimes deers grazing around, and sometimes they disappear and a bunch of bobcats appear instead. You can actually learn a lot how the animals' AI works by only observing for a while without shooting at them. I've spent lots of hours at such spots like that ridge on Bandera region. I have similar spots on all maps. Of course this consumes a lot of time and patience, but this is why I'm literally addicted to this game. Not just the shooting, but the virtual camping outside, comes handy in sh*tty pandemic times.
