You should not be spamming attack next to an enemy and hitting dodge once you see a windup. In a game like gungeon risk of rain, with far more enemies/bullets, an animation cancel makes sense.
In emberknights, attacks are well telegraphed, and consistent. You should be learning patterns, and going for 2-3 hits, then dodging.
I agree that enemies hit too hard in stage 3+, but that's another topic.
Haven't tried the other weapons yet, you'll absolutely be able to dodge out of enemy attacks if you only use your first 2 swings on them and save the 3rd for when you know you're safe
