The same thing goes for the secrets. There are technically 64 secrets in the regular game, even though it says there are 63. Unlocking the pinking shears does count as a secret, so your missing that one and the Spelunker/Dark/Mamma's Boy secrets.
I believe the Platinum God achievement works the same way, in that it only requires you to only get all the items that are on the collection screen to unlock it, and that you don't have to get all of the secrets or trinkets.
WotL makes the game easier in my opinion. While the DLC does include harder varieties of enemies and bosses, quite a few of the items are very over powered. Once you get used to the new enemies and bosses, I would imagine it would be easier to get those achievements in WotL rather than in the regular game (although I haven't tried to go for these achievements myself). The XL maps could also make getting these achievements easier too, since both bosses will be right next to each other. You would only have to go through one level instead of two go get to the bosses (although the XL maps can be quite big), or even better just use the Emperor tarot card to warp to the boss and defeat them both in a row to get the achievement.
