If you buy this game, you get the original Flash version of isaac, the exact one we all started with.
Besides all that, I looked in steamdb and checked the one manifest available. Sadly, it seems only the current version is available on the database. On other games like Starbound, I was more succesfull on getting older versions.
The one available was created on 2. May 2013, but last up0dated on 18. July 2020. There doesn't seem to be a way to get an older version anymore.
So, the oldest version you can realistically play would be a demo on newgrounds, with only Isaac and the first three chapters available.
Besides that, I can't really find anything.
Manage > Properties > DLC
Then disabled:
- "Binding of Isaac: Wrath of the Lamb" (v1.48)
- "The Binding of Isaac: Wrath of the Lamb Eternal Edition" (v1.666)

i even heard from a untrustable source that undertale had something like that too.
yup, search for the internet archive if you have time. maybe you'll find it.
