Does the game end after completing Story?

As the title says, after you finish the main story, does the game end or can you continue in sandbox mode?

Need to know if I should worry about doing all the side stuff and jobs now (since I won't be able to later) or if I can just complete main story and then go back and do all the side missions and stuff?

You can continue after the story. There's even some post-story content to do.

and are you able to "play" the game forward after the plot? respawning mobs, big ones, easiely to fight, farm, cargo, trade, explore, etc etc? thanks yet.

After the campaign ends there are a number of things you can do in the endgame.

1. Rifts - You must make your way through a series of portals to reach a boss and defeat him for a large loot payout. Each portal requires that you avoid death but also that you kill fast enough to get the loot payoff at the end. Each portal includes an added challenging scenario to make the portals increasingly difficult. You are not allowed to make any changes to your loadout while in a rift, however all consumables used during the rift will be refunded when the rift ends regardless of success or failure.
   
2. HRA's - Stand for High Risk Area which is an instanced zone with several waves of enemies that you must defeat and then defeat the final boss(es) for the loot payout. A smaller version of rifts with a smaller payout, but there's no requirement to how quickly you must complete the HRA. HRA's drop randomly from defeated mobs and can be purchased from various vendor NPC's.
   
3. Jobs - There are a number of NPC's that will provide random missions for the player with random objectives and will also randomly spawn throughout the game.
   
4. Random events - As you fly in Supralight mode a number of events can randomly be generated throughout the game.
   
5. Races - There are number of racetracks spread around the galaxy for you to try for the best times.
   
6. Trade runs - If you're just looking to earn some extra credits you can purchase commodities from various vendors and resell them to vendors in other systems for profit. I find this is a great way to save up for those expensive Tier IV ships.
   
7. 100% zones - If you haven't already you can try to uncover all of the hidden loot locations and complete all of the zone objectives spread throughout the game.
   
8. Incursions - Randomly spawned events where up to 3 ancient beacons spawn waves of enemies. When enough enemies are killed a beacon becomes vulnerable to attack. Defeat all the beacons for a large loot payout. The more beacons in the event the bigger the loot payout.
   
9. Dreadnaught - The Titans DLC provides a repeatable Dreadnaught encounter that has you performing a series of tasks to help defend against a large battle ship attack. There's a loot payout at the end.
   
10. Leviathan - The Titans DLC provides a repeatable Leviathan encounter where you delve into the depths inside this creature for pearls which can be opened for a loot payout.

Endless. You can think of the campaign as completely seperate game content. The campaign and side missions which I consider part of the campaign even though they are optional are the only things that have an ending other than zones but even zones that have been 100% completed will continue to spawn mobs from time to time.
