No Man's Sky sounds more like what you're looking for.
Its the actual start of the Game and allows you to play the first Sector. If you decide to buy the Game, you can continue your Demo Savefile in the Game :)
Starfield is a loading bar simulator, has worse loading bars than old Skyrim, this game seems like a new take on an old take, remember the space arcade shooters from the 1980's it's a modernised sandbox version of that with deep exploration aspects.
I just bought this game myself because it can be played in VR, the VR is really nice i hope there's a nice choice of cockpits but if there's not i'm happy with the cockpit provided, i've only played 3.5 hours in VR gonna put around 10hrs on it tonight
There are external Tools that can do that, but there is no officially supported VR.
Its not Starfield, becaues Starfield isn't even what Starfield wanted to be,
Its not a No Man's Sky clone, because that game is still figuring itself out.
You do not planet explore. All fights are in your ship. You system explore and boy are there PLENTY of beautiful sights they have put into the game. You can even look at screenshots to see some of the great views.
You have a small but servicable/customizable skill tree that allows you to make some fun builds for certain ships and/or weapons.
It has a story that works, but its not super deep and its also not gibberish lore. Its pleasant.
It is meant to be a pretty laid back shooty fun space game to vibe with the good music. You can also make it MUCH harder via the generous difficulty settings.
I don't understand how certain people's review of the game don't give you enough. Try Splattercatgaming's youtube channel or Mukluk Everspace 2 review for spoiler free impression of someone who played the full game. It sounds to me like you're just not bothering researching.. kinda hard to if you just skim videos at 2x speed. :P It'd be like reading your phone during dialogue cutscenes and then complaining the game has no story. Like, bruh.
