Sappers and Veteran sappers will stay and fight like normal infantry.
If you place these but the enemy pushes the front line or takes the zone before the engineers get there, they likely leave. (Full transparency: The last part is a reasonable guess, I have not observed this and can't test it right now)
What actions are you taking, in detail?
Do they all get built by the guys that don't flee or only a couple? (AP mines are 4 or so mines PER "mine" deployed...so 8 is only 2 engineers worth)
I ask because placement is a flawed nightmare. A tiny hill feature can be a separate entity and deny placement dispite being pathable.
I have also build a line of tank traps, hedgehogs, dragonsteeth and got a line of green placeholders, but as they got built it somehow invalidated placement of others and the line had several holes when they finished.
