Hello there!
For Better Luck Next Time I would recommend playing with at least two other friends. Start a match and, if you are lucky and the last player, every other player should focus on killing you off. After a few trials and errors (depending mostly on luck with the rolls) you should be able to get it. As it says, you need to be wiped out before you get to play. If you don't have a couple of friends available, I would suggest at least having one and 4 AI. Try to claim territories all together and next to your friend's, so s/he can attack you and kill you off before you go (that is, of course, if your turn is after hers/his).
For The Chameleon, I have not been able to get it, as it is kindly blocked by a paywall. Everybody has 4 avatars available to play with (your Steam one and three others), but in order to get the fifth one I believe you will need to pay for one of the packs that has them. You can change your avatar by editing your profile, in the main menu. I hope it all makes sense.

I don't know about Fanatic as I haven't got to that point just yet, but the French Revolution Map I believe is included in the Premium DLC. I would have expected you to get the Fanatic one with those numbers, definitely. Have they all been played from Steam or any of them might be from other platforms? Because I am not sure if they will count if they are played on another platform =S

I just got Fanatic by playing a Single Player game against a bot and my total games shows 109. I did not play any games from any other platform. I don't know how it counts game, though. It did pop up the moment I started the game, so they might be counted when you start them, not when you finish them.
