If you're already using no assists and still finding yourself having to kamakaze into the corner to go fast then there is something wrong with your overall driving style or your setup, or both.
I found the best setting if you are going to run 100% races is to set everything on normal except for player tire wear rate. Set it to "less effect". So, you will still have tire wear, but at a slower rate.
This way, it seems about even with the AI.
Of course, this is with all assists off.
In general, the game has a big issue (IMHO) that the cars are simply too tight no matter what you do to them, and they get snap loose on exit if you try to loosen them.. this causes a normal player to feel like he/she is over driving every corner, because your car is so tight that it runs up to the wall.. the AI do not have this problem.
I've learned to accept it if I want to enjoy a good race, and get the full NASCAR experience. For sure they car physics are not as good as NR2003, but the rest of the game makes it worthwhile to run a career.
I also have a good setup guide for your wheel if you need it. Found several issues that are correctable.
