Multiplayer Modes?
What are all the options for multiplayer? Is there a way to do a season with friends at all? Also when you race online, do AI fill the other spots if it’s not a full lobby?

You could technically do every race of a season in Online MP and Split Screen, without having to leave and create a new lobby, yes.
Also there is an option to enable or disable AI in Online MP, but not so in Split Screen (you will always have AI enabled in Split Screen).
