Different concrete textures?

I have 3 different textures of prime concrete foundation - one is smooth, 2 are bright grey, but seem to have big chunks of aggregate, and I got 3 that are very dark with big chunks of aggregate. What I am doing wrong to have everything smooth or at least the same?

Did you remember to flatten the foundation with a shovel after you pour it? Foundation will look chunky when first poured (and if you let it dry that way, it will turn into weak concrete..or at least it used to).

No, I haven't known I need to shovel it. It still remained prime concrete after drying, but I will surely check this out. Cheers!
