as the title mentions - how to get organic potatoes when after harvest all I get is budding ones?

I have tried to reproduce your problem. But, sorry, when I plant Organic budding potatoes, I harvest Organic Potatoes every time. The only way I can produce Budding Potatoes is with the Seed and Seedling Producer.

When you designate a field to produce a crop you can either order the seed or seedlings yourself, or let them arrive automatically. Are you sure you are not seeing excess budding potatoes from automatic purchases in your warehouse. It does take a few moments for your crop to be transferred to the warehouse from the potato digger after the harvest. I have seen, vary rarely, a double order of seed/seedlings from the automatic system (in my case it was blackcurrents) and at first this had me confused.
