If you click on an employee, you'll get a description of the skills they have. For manual work in the greenhouse would be best to use employees with the ability endurance, and for harvesting your plants - employees with the ability plants.
maybe I should try free mode also to get knownledge about more game mechanics.

You can't really assign people with say orchard/endurance to just the orchard fields, right?
I guess if you put them in a house with a radius restricted to those fields is one way, but not really ideal.
The problem is .. you can only assign players to ONE place. You want them to work multiple fields and/or greenhouses. So that is why right now we have to do it via house radius. I like the ability to have them work more than one field / greenhouse, so I guess we'll have to live with it.
But the game should properly PICK the best people if we can't assign them. It should pick the best machine person for machines and the best plant person to plant and the orchard person for orchards if they live in the same house.
You can control some of this with the Machine and the Manual Labor selectors per employee.
