Identical Dishes/Reservation

I have a challenge on my list called "Identical Dishes" ever since the hostess told me that a group made a reservation wanting to all get the same dish, whether or not it's on the menu. In my case, it's caprese. I've kept caprese on my menu ever since that conversation waiting for them to show up when I'd rather be making other things (I know I could keep it off the menu and prep it before the service starts before I lose access to the full range of ingredients, but I also don't want to sacrifice the fridge space to do so). Is there a window of time that they're guaranteed to come? I want to get rid of the challenge.

I've also upgraded this dish once already to the pesto version - and I've heard that there are some sequence-breaking oversights in this game, so I'm worried that they'll never come because it may not be the "right" version of caprese to trigger the event. Would love to hear from anyone else that's successfully closed out this challenge.

What you get is random. If you have Caprese on the menu every day, you'll probably go there the set number of times.
