Report a translation problem
If it requires a certain menu like you say light or unpretentious etc you need to keep that menu for the required amount of days.
If they ask for Italian cuisine for example you need to have at least 3 out of 5 dishes which are Italian. You can still switch recipes as long as the theme stays Italian for the required amount of days.

That seems right, yet I feel like I have sometimes fullfilled these conditions and didn't get the challenge. With you precisions, I will be able to pay attention while being sure of what I'm supposed to do.
However, the problem with this game is that you can't track your progress in terms of how many times you've achieved the goal, so even if things don't go well, you don't know what's wrong, as you said.
But the day as a whole is not graded. If I need at least a grade of 75 during 8 services, does it mean every single customer must have an appreciation of at leat 75? Or is the average on each day that is considered?
As you point out, it is hard to figure out what works and what doesn't since there is no progression shown in the challenges.
Oh, I completely missed that daily average grade. I'll find it even without a screenshot.
