Pre-service preperations

Why do my pre-service preparations vanish when service starts? I cook up some chips and meats before service and place them on the hot plate and a pot of veggies and put them on the hot plate warmer but it all just vanishes apart from what I store in my fridge.

There are 2 types of warming stations... the one with the heat lamps can keep individual items, including plated dishes, from cooling and losing quality, but it does not save anything during the switch from prep time to service. The other type can only hold certain types* of cookware, and does save items from prep time.

*examples: Soup pot, sauce pan, baking dishes, but not frying pan, or flat baking sheet

Tip: Check the recipe book for "Storage once prepped" (in green). Anything, that doesn't have that info cannot be kept for service. And those that do have that info can only be kept for service, if you have it in the right place - either refrigerator or warmer (which is NOT the heat lamp, but the thing with the two raised heating plates).
