you get three different price points, 1 star being cheapest price up to 3 star being most expensive, you don't set any dish's price point exclusively to a number, it's just the entire menu price that changes. This also dictates what kind of quality they expect, at a 3 star price point, they expect the best of the best dishes with good quality, unless it was changed which last i played it wasn't and i see no updates indicating any changes to it you usually only use the 3 star price point when you either develop your menu to a pretty high tier or if you are really hurting for cash, otherwise you usually stick with 2 star, you can however switch to 1 star to make people happier for less money, i also think it gives more customers but that might only be affected by the amount of dishes on your menu.

they are set prices, you just choose the price point, the price is indicated by $ signs. There are 3 different set points being 1, 2, or 3 $ signs. 1 being the lowest and 3 being the highest.
