Old plates no more available after upgrade but still needed

There currently have old plates as requests and challenges, but I can't find how to make these after upgrading it.
The main example is the request with 3 "Cacio e pepe" (the first version of the plate) that arrive when I already was in the second or third version of the same plate.
Is there a way to do so that I missed ?

One thing to learn is NOT to upgrade your dishes too early in the game...

This is ridiculous. I REALLY want to love this game, it's exactly the kind of thing I like, but there are so many game-breaking bugs and annoyances, and plain bad game design. Was any QA done at all? Considering the very high price point, it's really disappointing.
