When I looked up the word flambe means to set on fire, like baked Alaska, you set it on fire before you serve it. Edit: you might have to buy a lighter to be able to set it on fire, like with baked alaska setting it on fire burns the the surgars and makes it more sweeter.

Looking for an answer to a related question about this dish and I found this. I'm not sure if anything about the dish has changed since this was posted, but the flambeed seafood has to be cooked in pre-heated pan, then you have to turn the heat to high as soon as you start. Apparently "avoid heat too low" with this dish means that it actually has to be cooked on high heat (three bars). So once you start the flambeed seafood, you basically have to stay on it until it's done, since at high heat the only thing you have time to do is turn to a nearby chopping board and chop the garlic for it once it's started (which is the way I do it). As it reaches the end of phase 1, stir, then immediately add the flambe liquor - which then turns the "stir" action into the "flambe" action - then immediately flambe it before it finishes phase 2.

The question I have is why the final product never turns out to be an A+ when I cook it, even when I get all check marks on every step. I even botched the last step once and forgot to stir the pasta and sauce, got a B on that, then when plated, it went back to an A for some reason.
